鸡蛋灭菌保鲜工艺的试验研究

摘 要:本文选用过氧乙酸熏蒸法对鸡蛋进行消毒,并选用不同性质的三种保鲜剂处理鸡蛋。通过 对常温贮存中鸡蛋四项鲜度指标的测定,发现涂膜剂的性质是影响鸡蛋保鲜效果的主要因素,而灭 菌工艺对保鲜效果影响不大。结果表明,最佳保鲜工艺为石蜡直接涂膜,该组鸡蛋在温度 25°C,60 -80%相对湿度条件下存放 30 天,鲜蛋率为 100%,相当于对照组鸡蛋贮存 6 天的品质。

Study of Preservation Technics on The Quality of Shell Eggs

Abstract:Eggs were Sanitized with peroxid acetic acid,coated with three different character agents .Determined four fresh targets of the eggs to research effects of different fresh-keeping technics .It was found that the character of agents was determined factor of fresh-keeping.It was showed that the best preservation technics was coated with liquid paraffin. The paraffin-treated eggs had almost the freshness of 100% after 30-day storage at 25°C and 60%∼80% of relative humidity, whereas the untreated-eggs from the control hold freshness only for 6 day under the same conditions.

引起禽蛋腐败变质的原因很多,其中微生物的侵染、环境温湿度是引起禽蛋变质的外部因素, 而禽蛋本身物理化学变化是影响禽蛋品质变化的内部因素,在众多因素中外部微生物的侵染是引起 禽蛋变质的主要因素 [1]-[5]。本文选用消毒与涂膜结合的保鲜工艺,旨在对比不同保鲜处理的保鲜效 果,探究最佳的涂膜保鲜工艺。
